Coconut blossom sugar is traditionally extracted from the sweet blossom nectar of the coconut palm (coco nucifera). The extracted plant juice is first filtered and boiled down and then heated until it crystallizes into small balls. The result is a natural, golden-colored sugar with a fine caramel note. Our coconut blossom sugar is delicately sweet and does not taste like coconut, as the name might suggest.
The glycemic index of coconut blossom sugar offers a health advantage. At 35, it is very low and is significantly lower than honey or cane sugar. A low glycemic index means that blood sugar levels only rise slowly after consumption and strong fluctuations in blood sugar are avoided.
The low melting point and the good processing properties make coconut blossom sugar a popular ingredient for baking, cooking and sweetening food and drinks. Coconut blossom sugar has always been used to sweeten dishes and drinks, especially in Southeast Asian and Indian cuisines. Although the sweetening power of coconut blossom sugar is slightly lower than that of household sugar, it is still used 1:1 because of its excellent malty, caramel flavor.
