Xanthan gum powder can stabilize everything that contains oil. It is a perfect binder and is often used as an additive in food production. In addition, it is always used as thickener in the molecular kitchen. The advantage of using xanthan gum is that it can be used directly in cold as well as hot products and it has a high freezing and thawing function. Furthermore, xanthan prevents the formation of ice crystals during ice cream production. Xanthan also increases the water binding capacity of doughs and, for example, delays the stale baking of bread. Our xanthan gum is guaranteed free of cellulose, amylase and gluten.
